Our Baking Blog –Mother’s Day and Spring desserts
Please forgive the lack of cakes posted yesterday. This weekend we spent time with our mums rather than making cakes for them! I hope you enjoyed the lovely weekend and spoiled your mums too! Now that Spring is well and truly here, I found a gorgeous pudding made by the lovely Nigel Slater. It is his passion fruit roulade (please click on the link for the recipe).
This is one of those puddings which look great, even if, like me, you are not one of the world’s most artistic people. The important thing to remember with this is to make sure that you do not overcook the sponge – quite easy to do in my Aga! I am never more than 10 steps away from any timer!!! Also, Nigel suggests to wrap the cooling sponge in a clean but moist tea towel whilst waiting to add the filling. Roulades are brilliant too, because you can combine them with the fruits that are in season or simply use the fruits that everyone in your family enjoys!
I made this passion fruit one because I was curious, but would have been equally happy to make it using a mixture of berries – strawberries, raspberries, blueberries or even an indulgent pistachio and chocolate one!!!
On a slightly healthier matter, did you know that this Thursday 4th April is International Carrot Day? No? Neither did I until I started looking online at a food calendar for this year. So, to celebrate I have found this great recipe on the Tesco real food website for carrot cake cupcakes. A lovely recipe that you can make with children, slightly healthier too with the addition of the carrots, and sparklingly decorated with cream cheese icing and desiccated coconut – what do you think?
Hopefully, now that the clocks have moved forward, we can enjoy lots of longer, sunny spring days ahead!
