Delia Smith’s Madeira cake recipe

At the weekend I found this wonderful Madeira cake recipe by Delia Smith ( please click to follow the link to the recipe). It is a cake that I have never made before and I did not realise how simple and classic the ingredients are. If you follow Delia’s recipe she suggests sieving the flour, baking powder and salt from a height - I found that this worked really well and the cake came out very light and airy!

I used our KA Beater to make the cake mixture. It combined the wet and dry ingredients together quickly and easily and I used the medium speed so as not to lose all the air. What did surprise me was the consistency of the mixture before putting it in the oven - it was thicker than many mixes I make.

Also, and I don’t know if this was because I used an Aga, I found that my cake was done in 45 minutes, so if like me your oven is on the hot side , then I would check it frequently from about 40 minutes onwards; to ensure that your cake comes out golden and delicious!


I left the Madeira cake to cool in the tin before turning out onto a wire rack. This is the perfect cake to serve on a late afternoon with a lovely cup of tea or a mug of coffee! Enjoy!
